
Cruising With Wheels is the name of one of my absolute favorite YouTube channels. My Frank (I’ll specify, because two Franks are involved) and I found them when we were getting ready for our first cruise together, and we follow their uploads every week. They’re funny and ridiculous and loveable and knowledgeable- and most importantly, they’re enthusiastic about cruising! Whether learning about their favorite meals on a cruise ship or their experience at a particular port, we always get an honest and amusing account.
However, just like most of us, they’re not able to cruise every week, and one additional bit of fun they post is, ‘Frank’s Cooking Corner,’ in which Frank makes a simple, but yummy meal at a reasonable pace that is easy to follow. This week, he demonstrated this flavorful, layered, guilty pleasure casserole complete with doritos, and we knew it was going on our menu at home immediately.
Frank’s explanation and demo are fun, but this is a very easy recipe – and very easy to modify based on what you personally like. We don’t use onions and we like less spice and heat, so I left out the sauteed onions, the salsa, and half of the taco seasoning. I also made ours in individual casserole dishes so that there’s not the added struggle to serve the layers neatly/evenly. We also added some remaining whole doritos to the top for scooping. It was delicious, and we will definitely be having this again, but I will make this in smaller ramekins next time for better portion control. The larger individual casserole dishes are just too much meat and cheese in one sitting for us.
